Zucchini Stew with Ground Beef and Potatoes

A quick and easy meal that feeds five people. The whole pot contains about 2,000 calories so the per serving amount is about 400 calories.

You need one big pot.
About a pound of ground beef
Three potatoes
Two zucchini
29 Ounces of Tomato Sauce

Brown your ground beef in a separate pan or use the big pot.

Leech the meat in water (below left) to remove the excess fat. Clean the pot with soap and water if you used it to brown the meat.

Empty the can of tomato sauce into the pot and rinse out the insides of the can with some water (about a quarter can) to remove all the extra tomato that is sticking to the lid and sides. Add this water mixture to the pot.

Cut up your potatoes into somewhat fine pieces as they take longer to cook than the zucchini. Slice the zucchini (you can also peel it if you like, either peeled or unpeeled works in this recipe). Put all the vegetables and the meat into the pot. Add seasoning to taste.

Bring to a boil, then reduce the heat to a simmer, cover the pot with a lid. Stir occasionally and add more seasoning as required. When the potatoes are fully cooked the meal is ready! Serve on a plate or in a bowl.

French bread with a little margarine goes good with this meal, along with a nice cool salad.
