Curried Chicken Soup

A rich curry-chicken soup that you'll be sure to enjoy!


3 carrots (peeled and chopped)
1 white onion (chopped)
2-3 celery stalks (chopped)
1 garlic clove (crushed)
2 tbsp butter
4 cups of chicken or vegetable broth
2 tbsp curry paste
salt and pepper to taste
1 bayleaf


Put all ingredients into a large pot and bring to a boil. Reduce heat to low and simmer until vegetables are soft. The longer you simmer this soup, the more flavor you will achieve.

Tip: To speed up the soup preparation, cook the vegetables in to microwave before adding to the soup mixture.
